Flax Almond Meal Breaded Fish

Ingredients: Fish: Mahi Mahi, Salmon, Perch, Cod, Tilapia, Ahi, or any white meat flakey fish. Seasoning: Old Bay OR Fresh Lemon OR Lemon Pepper OR Dill Breading: 1/3 cup each Almond Meal and Flax Meal 2 eggs Olive oil OR Pam Coat the bottom of your cooking dish with Pam or Olive Oil and preheat oven to 350 degrees. Rinse and dry your fish (2-4 slices or 1 pound of fish). You can mix about a tablespoon of the seasoning of your choice in with either the eggs, breading or put it directly on your egg’d fish like I did. Add salt and pepper as you like and bake for about 10 minutes. Fish will be done when it is flakey when poked with a fork and no longer opaque. Overcooking will dry it out which means you will likely use more tartar sauce or lemon. Enjoy!
