Cilantro Corn Salad -Recipe – 1/2 Red onion – 2 cups sweet corn – 2 cups roasted corn – 4 tbsp cilantro or chadon beni (if you live in the Caribbean) – 1/2 of a lemon – 1/2 tbsp black pepper – 2 1/2 tbsp of Olive Oil – Kosher salt (to taste ) Instructions on cooking- I leave the onions and cilantro raw and if you are using canned beans there is no need to cook them (as the are already pre-cooked), just rinse them to get all of the sodium off. Since I used frozen corn all I did to cook them was take each set and heat them in the microwave for 3 mins. It is best if you refridgerate the dish once completed for 3 hours before eating so it can marinate a bit in the EVOO (extra virgin olive oil). BOOM! Your done!
